The amount of gas and sugar/additives put into it.

Maybe one has baking soda or something in it.

No difference. Soda water is American English and sparkling water is what everyone else calls it. Both mean the same thing: fizzy water.

Club soda and soda water are just American English regionalisms for carbonated water - i.e., what we call sparkling water if we're posh or fizzy water if we're normal.

Why can you buy sparkling water and soda water here then?

Marketing. They use Americanisms to make you think it's different, "cooler" or something you haven't tried before so that you'll take a punt on it. Which clearly works. Did you end up buying the "soda water" ahead of the "sparkling water" (or vice versa) and then wonder why they tasted the same?

No, I just wondered what the difference was. I think soda water is cheaper, my guess was that sparkling was better quality or something.

"Soda water" contains bicarbonate of soda and tastes different from "carbonated water" which doesn't, however "sparkling water" can be used as a generic term for both although here it's generally used for carbonated water and not soda water :50:

From experience both taste different, sparkling water is used for drinking and soda water is more of a mixer.
