    Had roast chicken with courgettes sweet potato and peppers.

    Roast a whole chicken in the oven with veg laid around it, hot box it with tin foil then shred the chicken after cooking at medium heat for 2 hours then 30 min blast at high heat. Just falls off the bone lovely.
