    Having it again tonight. The schwartz sachet is banging with the kick in it. Favourite dinner at the minute..

    Having the same, ish.

    Got 2 cowboy ribeye steaks the other week. Got them out the freezer Thursday to make sure it's sorted :56:

    1.7kg of steaks a bit mental but it is for valentines day (were doing it early due to work)
    Attempting my first ever reverse sear, got my new in-oven thermometer inside the middle of the entire cow :56: until its 10 degrees below desired rare temperature. Then in the newly acquired griddle pan to sear it fast. Rest under foil with blob of butter on warm plate for 10 mins, internal cooking should raise it perfectly to rare. Possibly over to medium rare but thats fine. I'll be taking a photo of this utter disaster but the things as thick as my yoghurt pot :56: iv litterly had thinner roasts :fear: can't wait.

    My sides are roasted pepers, onions and whatever else I find in (out of date) basil infused oil and corn on the cob and beer battered onion rings.

    Never done a reverse sear , be interesting to see how it comes out , meant to be good for bigger steaks like yours

    What is this reverse sear you speak off? Need to go google that for the two big * off cracking rib eyes I have just purchased from my local meat purveyor.

    :56: I put them in the oven until 15 degrees below desired temperature. My thermometer came with a we guide to temp or Google it. Then take them out and put them on a roasting hot smoking pan with some oil with a really high smoke point but thats up to you, I found it gives a better crust. I chucked some butter on top after first flip mmm then fired it onto a warmed up plate covered in foil for 10 mins and it roughly raised 10 degrees. Actually worked well, but I bet chucking it on a roasting hot smokey bbq would have made a better crust mmmm.

    Next time I'm trying the roasting hot pan first to seal it then finish it in the oven to see if it makes any difference

    Just watched a couple of videos, it looks very tasty! Might need to pop back out for a thermometer now :35:

    That's defo how I'll be doing my barbecue this summer :50:
